Boerewors aka Wors known as a sausage and is very popular in South Africa. Pap this traditional porridge made from mielie-meal which is ground maize or other grain.

Ingredients
- 600 gram boerewors (South African sausage)
- 2 cups water
- 2 – 4 cups white mielie meal (pap)
For the gravy
- 2 onions, sliced
- 2 red tomatoes, sliced
- 3 tbsp Olive oil
- Heat the olive oil, add in onions and fry them for 3½ minutes, add in the sliced red tomatoes and cook until a tomato gravy is formed
- Pinch of salt and pepper
- Add Garlic and mild or hot chilli spices, according to taste, to tomato and onion mixture
To make the Pap:
- First boil about 4 cups of the water in a pot.
- Set aside about ¼ of your mielie meal and mix the rest with about 3 or 4 cups of water to make a thick paste make sure you have a strong arm and wooden spoon!
- Then slowly add this paste to the boiling water, stirring all the time, this will prevent lumps from forming and bring to the boil again. Keep cooking and stirring for a few more minutes.
- Then slowly add the remaining mielie meal to the pot. The pap should be very thick and smooth, it should then begin to pull away from the sides of the pot and form a large ball. Cook for a few minutes more.
- Then transfer it to a plate and serve your pap with the boerewors and tomato gravy
